Flambe with King Prawns and cream sauce

 

Ingredients (3-4 servings):

- 9 Fresh king prawns (peeled and deveined if you wish)
- garlic (2 pieces chopped in slices)
- 1/4 cup sour cream
- 1/4 cup cognac or armagnac
- Salt and pepper
- 2 Tablespoons of butter (you can also use olive oil).

Preparation:

Melt the butter in a big pan (medium heat). Add the king prawns, the garlic and saute for 1 minute or a bit over (depending on the size of the shrimps). Carefully add the cognac or armagnac to the pan. Ignite with a match (or a long-neck lighter) and return to heat. Shake until flames burn down. Immediately add the sour cream to the pan. Boil and reduce until thickened. You can add a bit of lemon juice at this time if you like. Cook until the shrimps turn pink.
Season with salt and pepper and serve.

IMPORTANT: Do not overcook because the shrimp will become tough.

Serve with fried potatoes with rosemary and garlic.

Wine suggestion: Riesling or Grauburgunder
