Thai curry with coconut cream sauce

 

Preparation time:
Ca. 20 minutes

Costs: for around 3 to 4 people: ca. 16,00 EUR

Ingredients:
1 Broccoli
1 Zucchini
4 to 5 carrots
Champignons
Baby corn
Baby asparagus
Fresh basil
Spring onions
Fresh green pepper
Thai berries
2 to 3 red chilli
Pine nuts

Coconut milk
½ cup of cream
Paprika powder (bell pepper)
Pepper
Salt

Palmtree oil or sunflower oil

Basmati Rice or mixed rice with wild rice

Preparation:
Wash and cut the vegetables.
Put all together in a wok or a big pan and stir fry for about 10 minutes.
Add the coconut milk and the cream and put the spices as spicy you like it.

At the same time cook the rice.

Stir fry the pine nuts and put it on top of the vegetables and the rice. Ready.
